These Vanilla Soaked Overnight Oats with Maine Blueberries + Chia Seeds take all of five minutes to prepare and are prepared at night so that come dawn, a healthy | quick breakfast awaits. These oats are best when eaten cold. They are creamy, they are refreshing, and they are full of protein.
In a medium size bowl, combine all ingredients except the blueberries and pepita seeds. Stir well to combine. Then fold in blueberries. Lastly, top with pepita seeds.
Seal in Mason jar or bowl and place in refrigerator overnight. Note - I prepare my oats in a bowl, then store them in a Mason jar.
