These Vanilla Soaked Overnight Oats with Maine Blueberries + Chia Seeds take all of five minutes to prepare and are prepared at night so that come dawn, a healthy | quick breakfast awaits. These oats are best when eaten cold. They are creamy, they are refreshing, and they are full of protein.

Ingredients
Vanilla Soaked Overnight Oats with Maine Blueberries + Chia Seeds ||
  • 1/2 to 3/4 Cup Rolled Oats | Not Quick Oats |
  • 1/2 Cup Greek Yogurt
  • 1/4 Cup Milk or Water
  • 1 Teaspoon Vanilla Bean or Extract
  • 2 Tablespoons Vermont Maple Syrup | Or Local Honey |
  • 3 Tablespoons Dried Shredded Coconut | Optional |
  • 3 Tablespoons Chia Seeds or Seed Blend | Nutiva |
  • 1/4 Cup Fresh or Frozen Blueberries | Optional |
  • 2 Tablespoons Roasted Sea Salted Pepita Seeds | Optional |
Instructions
Method ||
  1. In a medium size bowl, combine all ingredients except the blueberries and pepita seeds. Stir well to combine. Then fold in blueberries. Lastly, top with pepita seeds.

  2. Seal in Mason jar or bowl and place in refrigerator overnight. Note - I prepare my oats in a bowl, then store them in a Mason jar.
